Authentic Costa Rican arros con pollo with potato chips and black beans, a salad, fried plantains, and chocolate and pistachio ice cream sundaes for desert, at the home of a friend.

Mexican lasagna. Not sure how it's going to turn out, though.

I make it with corn tortillas instead of noodles, and use fire roasted green chilies, sliced olives, corn, diced tomatoes, onion, and a bunch of spices (either a taco seasoning packet, or cumin, coriander, chili powder, garlic, salt, and smoked pepper) cooked with whatever ground meat I'm using - hamburger, turkey, chicken, or pork. I layer with co-jack cheese, pop it in the oven to heat through, let it sit for about 10 minutes so it isn't molten inside, and serve with a dollop of Mexican sour cream and guacamole on top. It is one we fight over for the leftovers for lunch the next day.
