    I'd go with something contrasting. My choice would be a blue - either a royal blue, or French Navy, or maybe plain navy. Would pick up on the blue undertones in the hat.

    Unless you specifically want a brimmed hat, the easiest option from pov of it being packable is probably a cap in waxed cotton or hogshide (scotchguarded), or the likes. Stetson among others do nice options for this.

    Horses for courses, really. Wool can be warmer, but having had more than a few much-loved wool knits destroyed by moths over the years, I have an instinctive preference for cotton for that reason. Cotton knits also tend to be cheaper, which is a big plus for me these days.
