Homemade chicken pho. Slow cooking skinless chicken thighs in low sodium chicken broth with charred sweet onions, ginger root, star anise, cloves, and cinnamon stick. It has been cooking for about 5.5 hours at this point. Smells so good!
Later, I will shred the chicken, reduce the broth a bit...
His grandparents were married 61 years. We started later in life with each other as I am his second (but by far his BETTER!!!) wife. The goal of 50 years is a great inspiration to take care of ourselves.
This was quite a challenging year as parents. Lily is 8.5 and starting to experience a...
He promised me 50 years (he will be early 90s then), so we still have a ways to go.
It is a lot of work, but worth it! (My parents are coming up on their 56th anniversary. Can you imagine being with one person for that long? Better like them a lot!!!)
I got the judges comments about my cookies.
"certainly representative of old world cookies, not overly sweet and crisp, great presentation."
Ok. So next year I am going to enter them in the Ethnic Cookies category. Judge liked the cookie, just not as a sugar cookie.
Monday was homemade spaghetti and Caesar salad.
Tuesday was Taco Tuesday. Soft flour tortillas & ground beef.
Tonight, homemade, grilled pepperoni and Canadian bacon pizzas. Quick dinner before Lily's first Girl Scout meeting of the year. I am in charge of craft projects for the Troop this...
I tried my hand at something new-to-me: eye of round roast. Treated it like prime rib (rubbed outside with kosher salt, pepper, garlic, mustard powder, onion powder, Italian seasoning, paprika), let it rest for 45 minutes, and cooked at 500° for 7 minutes per pound, then turned off the oven and...
Breakfast burritos. Scrambled eggs seasoned with applewood smoked black pepper, salt, chili powder, cumin, coriander, topped with colby jack cheese, wrapped in a warm flour tortilla, smothered in crema agria & picante sauce.
Pecan pie coffee for Hubby, Yorkshire tea with Turbinado sugar and...

I had nearly a whole pint of heavy cream left from my Fair baking, so I used it to make a Dutch baby for breakfast. Decadent!
I forgot we were out of the syrup Lily and I prefer, so I used the last of the cream to make Marionberry cream for is to have on our Dutch baby. She was just eating the...
Strangely enough, the cookies are my specialty that I have made for years and years. My Grannie taught me how to make them. It was her mother's recipe. They are a Norwegian cookie that has a specific baking technique (the color on the bottom is a pale golden blonde, once you get beyond that...

Having never entered this category, I am not familiar with the judging criteria. I know how I like *my* scones, but it may not be what they are looking for. :(
(I also entered the photography category this year for the first time.)
I am practicing my baking entries for the State Fair (turn-in is Monday). Hubby and Lily are my ever-patient guinea pigs. This morning they got sweet cream scones and Marionberry clotted cream. The scones need work (have to try a different baking tray), but these were delicious. Light and flaky!
