The suppleness and ease of wear would go to goat overall, I think, but as we are talking about long wear periods and jackets made to last decades it is hard to say. My full-weight HH jackets are comfortable-ish, the mid-weight ones are more comfortable, the goat one is warmest soonest.
It has a drier hand and it will take a long while to develop a patina and people claim, too, that it is less water-resistant; it has few supporters here, but I reckon it's an ideal weight for daily wear, that it's 'warmer' (as is goat) and that it has a great grain. Next order, a Plainsman...

I definitely prefer no gussets in jackets: they look ok, but they seem (to me) to be a repair waiting to happen. On the other hand, I haven't had any noticeable mobility problems in my jackets.
The Maxwell. I own a Maxwell and I had a Teamster - the Maxwell is my favourite and gets worn a lot. I think it might be the best of Aero's button front jackets with the possible exception of the Premier Work Coat, but it's probably still the Maxwell I'd go for. It would fit the length...

I have a russet Badalassi work coat which is great - thick, depth of colour, heavy. I also have a dark seal Vicenza Mariner - which the hide is perfect for. The two hides are not at all similar, but I still think that Vicenza has benefits. I'd pick either it or goat for practicality...
I haven't had a bad experience with Aero in 13 years of dealing with them. The one minor problem I had (due to my misunderstanding of inner pockets) was dealt with rapidly and professionally. It was not a thing for anger or accusation.
