Depending on the weather at my destination I wear my fedora or a tweed newsboy cap. If a sunny locale I wear my Panama. Packing in a silk bag with a velcro closure protects the hat while under your seat. Way cheaper solution than buying a hat when you arrive.
You will never get the crisp look of a fine fur fedora out of a packable hat. Yes, they are serviceable, look ok for a casual travel hat. I never pack a fedora. I wear it, carry a silk bag in my pocket and when on the plane place my hat in the bag and place under the seat.
These style of ribbon is meant to sit loose on the brim. A good spritz of water and a shot of steam and it will lay back down. After the steeam you may have to manipulate it a bit with your fingers.......pressing it down a bit. It may take a few tries.

If you block it on exactly the same profile block (this hat has a decent amount of taper) you would likely get 1/4" max. If you blocked it on a straight sided block w/ squared shoulders you might end up with less brim and it would be slightly asymmetrical.

You might want to save yourself some time and just go custom. Not much out there in the used market in your size. In my 7 years of custom hat making I have only ever made one hat in your size.
I have not been able to find high grade that so settle for the denatured alcohol which has about 5% methyl to prevent me from mixing cocktails while I work on hats. Tis a good thing!!!
