Brim binding is mostly aesthetic, though it does seem to add some structure and helps retain the snap of a brim. Wires are generally not used in men's hats (though there are exceptions) and when we do see them in modern hats, they are mostly low quality wool hats because wool felt won't hold... -

Sure, get yourself the correct sized block for the finished hat that you want to make. You can try securing an extra felt body to the block and then blocking over that as well.
