Well the linked hat has a pressed in crease, so it's not super, duper old. The current Stetson Chatham is very, very similar, with a slightly slimmer ribbon, even has the suede finish.

I believe the mode edge was a true felted/Cavanagh edge. In other words, instead of being folded over and sewn, the edge of the brim was folded over in an earlier stage of the felting process and the edge gets worked back in to create a seamless edge.

Nice job! I like that hat too, I picked up the Resistol/Hatco version (they're now selling it with a different liner and Stetson branding). it was another Matt Deckard hat. One of the hats from the sequel Rooster Cogburn was apparently an off the shelf Resistol from Nudie's.
The "bow" is a few pieces of ribbon that traditionally were stitched to the hat. On lower quality hats you sometimes see them glued on.
Re: styles, I kinda think you're over thinking it. We tend to say around here, wear the hat, don't let the hat wear you.
