The current Perfectos have the same ≈ 4 (slightly more on the S/SH) inch drop as the vintage models actually. They were never a super sharp V.
I didn’t measure so I’m not sure if it’s sized down or cut differently now. I think the new 618HH might be both.
And then there are mid-tier lines like United Carr, which is Buzz Rickson's patterns but less military in aesthetic. Or Moduct, which is like Buzz Rickson's meets Arc'teryx. Still high end construction, but made in China.
The above jacket is still a high end item. It's different from the mall Toyo brands and SC is pretty explicit about it being made in China, like some of the Tailor Toyo stuff.

I am a massive fan of Sugar Cane and every one of their leather jackets I've seen has blown me away, yet I pretty much never see them for sale even on Japanese sites.

If you want the shine to go away, I would not get the 613SH (although I would suggest you approach it with an open mind because the way the shine turns into this rich glimmer as the grain pops is beautiful).
But if you really can't stand shine, ask to see the 613S. Same jacket, but in a matte...
Is your nylon a 1950s original (or Buzz Rickson’s repro thereof)? Later batches, both military and civilian, use a much lighter nylon and are constructed differently.
Five Star’s MA-1 pattern is based on those originals that a flight jacket collector sent them to study.
You can see it happening in this photo of Marilyn Monroe for example. And leather makes it much more pronounced because the originals were a very silky nylon.
The tinted conditioners will be fine (they are not dyes and are used on shoes much more expensive than our jackets) but if he plays around with actual dye this could go very poorly.
