Grilled pork fillet, grilled asparagus, steamed broccoli and cauliflower, sweet corn (on the cob), kale/broccoli slaw, blackberry pie.

(Hubby gave a very rare thumbs-down to this meal, so retired from the rotation.)

Slow cooked pork tenderloin in green enchilada sauce, flour tortillas, perfect guacamole, tomato, cheese, lettuce, crema agria. So yummy!

Rough recipe for the pork I made last night:

2.5 lbs pork loin cubed & seared, 1 large can green enchilada sauce, 1/2 sweet onion rough chopped, 1 teaspoon garlic powder, 1/2 teaspoon cumin, 1/2 teaspoon coriander, 1/4 teaspoon smoked black pepper, 1/2 bunch cilantro (bundled). Cooked on high for 4.5 hours.
