What's for Dinner?

Tonight a Spanish inspired dish.....Cod pan fried, with a bit of chorizo sausage, onion, garlic, olive oil, tomatoes and some black eyed peas (instead of white beans). Unfortunately it won't be fish as the package I pulled from the freezer is apparently chicken breast not fish. Still Spanish...just with chicken!
Sounds delicious either way. One of my favorite local Mexican restaurants serves a dish that's a grilled chicken breast smothered with chorizo and queso. Probably not the healthiest option, but I get it nearly every time I'm in there. Which wasn't tonight. I had grilled salmon and stir fried bok choy. It was good, but not as anything involving chorizo.

I forgot to post the most important ingredient and the entire reason to cook the damned dish AND I almost forgot to add it to the dish.....generous spoonfuls of smoked paprika.

Okay, not the healthiest of choices but in our defense it is screaming hot and we don't feel like cooking. So my wife made a big bowl of her salsa/guacamole (which in itself is very healthy) but it is the big bag of tortilla chips to go with it that does us in. Still it was one hell of a good meal along with a very tall cool Faxe /danish beer.

The Fading Fasts have done that on many a too-hot-to-cook summer nights. As you note, the guac is on the healthy side; the chips, not so much. Sometimes it's all about getting through to the next day.

I didn’t scroll through all 800 pages of this thread but has anyone brought up using a sous vide? I can not recommend it enough. Especially if you love steak, you can cook it to perfection every time. I can make a chuck roast taste better than a filet mignon and be almost, if not as tender.

You can get the whole setup for relatively cheap on Amazon. I think I have maybe 120 dollars in my whole setup. You can buy a 15 dollar chuck roast, cut it into 6 pieces, and have steak for days. Now, I will tell you that it is not a quick process. For me to turn cheap meat into something good it takes at least 24 hours but I recently did it for 30 hours and it was amazing.
