Tonight I think I’ll have leftover chicken and risotto. I live by myself and made a whole bunch the other night. Its pretty low cal. J

Tonight is roasted lemon pepper turkey breast, mashed potatoes (sweet potato for Lily), steamed broccoli.

Dessert is white chocolate/macadamia/orange zest cookies I made yesterday. Might make an ice cream cookie sandwich with the vanilla bean ice cream we have.

Last night I made veggie stir fry with chicken and a bit of chow mein noodles (the soft soba kind). I used broccoli, onion, carrots, crimini mushrooms, baby bok choy, scallions, and kale.

I have a confession to make. I snuck the kale in with the veggies. I cut it up small so it would blend in with the leaves of the bok choy. And I didn't tell hubby he was eating (the dreaded) kale until he'd doused his bowl with sambal and eaten half of it. He gave me a loooong, hard look when I told him, poked around in his food to see how much there was, realized it was ALL OVER, and decided that wasn't a battle he was willing to fight. Lily, on the other hand, picked all of the kale out of hers and ate it first. Then the mushrooms, and then the chicken. Had to fuss at her to eat bok choy, broccoli, and carrot. But she ate it.

James, I'll be severely disappointed in you if you let this one slip past. :D

Sneaking kale into my food here is a hangin' offense. I save the kale for my birds as well. They love it---poor deluded birds. :p

Ran into the common problem of missing one ingredient to make a recipe. So...I took what I had and ran with my own creation.

Beef and cabbage Stir Fry: Browned ground beef with garlic and oil. Added about half a head of cabbage and peppers. Cooked until veggies were tender and beef cooked. Then added soy sauce and a water, cornstarch mixture to make a sauce.

Turned out well. Hubby said it was the best homemade stir fry he had.

I love it when a recipe turns out well by accident.

I've done that kind of stir fry before. If you have beef broth, sub that for the water for the water/cornstarch mix. And a bit of powdered ginger browned with the garlic and beef adds a nice flavor. :)

Thanks Babydoll! I will try that next because the family said they wanted to keep it in the meal rotation. This suggestion will jazz it up next time.

Also sometimes we put in broccoli instead of cabbage.

Now I'm hungry.

I do prefer a sweeter taste. Totally forgot about adding some honey to the sauce. Good idea.

Will have leftovers tonight. Might add a few kicks to the sauce for a repeat.

My standard stir fry sauce (which I put in a pint jar, seal, and shake to mix): low sodium soy (reduces when cooked, so plenty salty), toasted sesame oil, ginger paste, minced garlic, sambal or sriracha, brown sugar, a bit of water or lower sodium broth, and cornstarch.

I also do a mix of vegetable oil and the sesame oil for cooking the meat.

We're not scared of kale down south. Nor collard greens, nor turnip greens.....especially if some cornbread is involved.

One of my favorite ways to have kale is to fry up some good smoked sausage (not that kind that tastes like a big old hotdog, I mean some good Cajun sausage or andoille) then sautee some onions in the grease then add the kale and stir it around a little, put a lid on for a few and steam it, then dig in.

My wife takes cut up kale or collard greens and tosses them with olive oil, spreads them on a cookie sheet and sprinkles on some coarse ground sea salt, then bakes until crispy. My kids will fight over the 'kale chips'.
