What's For Breakfast...

Okay, as someone who fancies himself a good cook, could not decide what to eat so ended up with peanut butter on some wheatthin crackers to go with my coffee. It serves to defer the choice til lunch time and hopefully by then will feel more inspired. Good thing there is no leftover pizza in the fridge.

As someone who eats peanut butter 300+ days a year, I consider peanut butter on crackers (Saltines or Ritz are perfect, but almost any will do fine) to be a perfect breakfast or lunch or (occasional) dinner or anytime snack. Today, combined breakfast and lunch was peanut butter and Fluff on wheat bread with some leftover Easter Peeps as dessert.

I just read about a study on the effects of vegetarianism on longevity. The findings are; there is no discernable effect of eating vegetarian and death rates. Now I do NOT want to get into a debate about the merits of a vegan lifestyle. The methodology of the study can certainly be questioned. But the humorous tone of the article was entertaining. If focused on the 'righteousness' of vegetarians. Joke...."How can you tell if someone is a vegan?......They will TELL you!"

I will eat any peanut butter around, but we buy, primarily, two kinds. Skippy Super Chunk (brand I grew up with which, in a way, will always be peanut butter to me) and Cream Nut Crunchy a newer, more expensive brand that has a stronger peanut butter flavor (and only has two ingredients - peanut butter and salt - so, in theory, better for you, but who really knows). And, like you, we basically bulk up when they go on sale, which they do on an almost rotating basis in NYC grocery stores, so we rarely pay full price.

Crispy bacon, oatmeal with brown sugar, cinnamon, nutmeg, and golden raisins, cup of Harney & Sons breakfast blend with Turbinado sugar, and a splash of whole milk.

Lily chose banana walnut oatmeal (extra walnuts), crispy bacon (ended up dunking in her oatmeal), and a half glass of Cran-Apple juice.

I redeemed myself from yesterday's poor excuse and made Bacon and Blue Cheese scones. I use the Joy of Cooking basic scone recipe and add things to it. Today was the bacon/blue cheese day! AND there is enough for tomorrow's breakfast.
I do not understand how there would be anything left for tomorrow as that sounds like a really nice breakfast. I would eat until I rolled over or there were no more.

I redeemed myself from yesterday's poor excuse and made Bacon and Blue Cheese scones. I use the Joy of Cooking basic scone recipe and add things to it. Today was the bacon/blue cheese day! AND there is enough for tomorrow's breakfast.
That is my go-to scone recipe, too! I add a couple dashes of nutmeg to mine & serve with Irish butter and Marionberry jelly. (And aren't scones easy to make?)

Yes, I used to roll them out into a circle and cut them into nice 1/8 slices. But now I just add twice the liquid and just (as drop cookies ) plop them onto the baking sheet. Much quicker and nothing is lost in terms of quality or taste. My second fave is adding a fat cup of raspberries and a cup of white chocolate chunks. Blueberries and white choco works well too. I shall try your nutmeg and jelly.

Love the thoughtfulness around the details. Which, if you remember from another thread, is why I'd always be the first to sit down at the table if I was there.

I grew up in a household where from a very early age I was "on my own" to feed myself breakfast and pack a sack lunch. I usually had Cheerios, however I also am lactose sensitive (cannot drink milk), so would wnd up not eating much, or feeling/being sick. I'm grossed out by sandwiches that have been sitting around for a while, so I didn't eat really well - a lot of days it was an apple, cheese, or vending machine foods. Dinners were abysmal. I can do differently now that I am the mom. Lily gets breakfast made for her every morning, and an awesome packed bento-style lunch. Sh realizes she is fortunate.

(Last week she was aghast when she saw a classmate consume a carton of chocolate milk and 3 packets of Swedish Fish as their lunch. She told me that wasn't healthy for the other student's body! So glad she realizes this. What I am teaching her is sticking.)

I pat all the dough out into a slightly domed disc about 8" across and cut into 6-8 wedges. No waste dough.

Drop biscuits are yummy, too. Same dough, different method.

Another combo to try: dried cranberries and orange zest.
