We had cow's tongue at our family Christmas dinner last year. Each year we prepare something that our children and grandchildren have never before tasted. It was a big hit. My late father-in-law loved headcheese. He and my wife would eat it all the time. It reminded me of stinky feet.

I have difficulty articulating just why I couldn’t stomach Spam when I was a kid, and why I seem to have outgrown that aversion, although I’m still no great fan of it. I find it markedly more palatable fried.

And this from a kid who loved liverwurst, until one day in the third(?) grade when I fell ill after lunch (which included a liverwurst sandwich), was sent to the school nurse’s office and then home, which caused me to miss bowling that evening. I blamed the liverwurst, and have avoided it ever since. I suppose I’m had it a time or three in the intervening decades, but I couldn’t say when that might have been.

As far as Spam goes, I have fond memories of the year we had a baked Spam for Thanksgiving. I am not especially fond of turkey -- it's dry, I don't like the taste all that much, it takes far too much effort to prepare, and there is always way way too much of it -- but a Spam studded with cloves, glazed with a mustard-brown sugar sauce, and baked in the oven is genuinely good eating with absolutely no waste. What's not to love?

What's not to love?

I'd like the exact receipe if you have it. I think it might be on for next Thanksgiving.

We used the recipe that used to be on the back of the can:

1/3 cup brown sugar
1 tsp water
1 tsp mustard
1/2 tsp vinegar.

Mix ingredients in a bowl. Score Spam in a diamond pattern, stud with whole cloves, apply glaze with a spoon or a brush. Bake in a 375-degree oven for 20 minutes, basting as needed. Slice and serve!

Thanks Lizzie, it'll be on our holiday menu this year! We usually don't do turkey anyway. Lasagna, reuben casserole, seafood stew, and glazed ham are always favorites around here. We always try to do a celebration of food and make something different from the traditional holiday fair.
