I don't know how I missed this before: one of my favorite summer drinks and a slice of birthday cake - now that is a special lunch.

It takes skill to make a Tom Collins right (no mixes allowed) - as the gentle balance of the lemon juice and simple syrup must enhance the gin not overwhelm (and never be too sweet). Now, couple that up with a good slice of (what I assume is leftover) birthday cake and you just kicked up the day. Kudos - I'm jealous.

Today I had some leftover ribs from dinner yesterday.

A bacon, lettuce, turkey, tomato, and avacado sandwich with garlic fries and a Dr. Pepper

Ham and cheese on pumpernickel with salt and vinegar chips and a Diet Coke.

Another BLT with avacado, a zesty dill spear, fresh fruit, and a strawberry Italian soda. I could eat BLTAs all day long.

Classics are classics for a reason - great lunch. Had an iteration of it myself yesterday, just substitute ginger ale for coke.
