I agree with Joao, it is probably not so much a European/American thing, but depends on the family. On my wife's side, there are a few gatherings every year where the whole family gets together, usually for birthdays. It is very important to them. On my side of the family...let's just say not so...

Felt year round for me. I bought a Stetson Toyo a while back, thinking it would be better suited for warm weather. It is not. And it is not as good for sun protection either. Just bought a white felt hat to replace it.
Not a cowboy, but a firm believer in making things my own. I'd say to try different shapes and have fun with it. There are a lot of pictures on the net to take inspiration from. If you want to stay traditional, there are quite a few charts with cowboy hat shapes on them, and people explaining...
