Lorne, yes you can re-shape the brims from one style to another. I do it in two steps, first I wet the the brim and use a steam iron on an ironing board to get out the old shape and make the brim flat. That's before I cut the brims down - a fedora with a 4 inch turned down brim would hang way...
As long as you don't spray the underside of the brim and crown, it wouldn't be sealed. I bet the fiber could breathe fine. It might be slower to dry, but then it would also be slower to get wet, too:)

According to hatsize.com, 60 cm is 7 1/2 in the US. This also matches the other online references I have seen.
It also says 60 cm is 7 3/8 in English sizes and 6 1/2 in French sizes.
7 1/2 is 60 cm in US sizes, 61 cm in British sizes and 62 cm in French sizes...

I haven't tried to soften them up. They will always be much stiffer than my dress felts, since the cowboy felt is 2x or 3x thicker. The only reason I can see that a nice cowboy hat costs 4x as much as a nice dress hat is that it has 4x as much fur felt in it.
