My wife's brother was over last night, so I did a stuffed roast chicken (with stuffing prepared for but not used at Christmas that we'd frozen), roast potatoes and mashed (can you have too many potatoes???) and carrots, washed down with pumpkin wine from the Kawartha Lakes winery.

Wish I'd taken some photos...

Several years ago my wife and I had a Sunday brunch at an English pub in Phoenix. Great food with a choice of roast lamb or beef. Each came with roast potatoes, mashed potatoes, AND Yorkshire pudding. By mid-afternoon we were both in a carb-induced coma.

Last night I made a Cuban pork roast, black beans and mashed sweet potatoes. If I motivate myself to make some Cuban bread today, tonight we'll us the roast and some deli ham I bought to have Cubano sammiches.

You are correct, you can never have enough potatoes.

Sadly...no. The oven part of my stove gave it up back in the summer and I haven't had a break life's expenses to repair or replace it yet. I've been making do with the range top and a crock pot just fine, but neither is very good for baking cornbread.

You can make cornbread in a crock pot! :)

Tonight we went out for Chinese for my oldest son's birthday. He turned 15.
