Here in the deep South we have a summer sandwich tradition called the Tomato Sandwich (also known as a mater sammich). It's as simple as it sounds: two slices of bread, a thick slice of tomato, mayo, salt & pepper to taste. Dress it up beyond that, and it's no longer a tomato sandwich.
Add a pound of bacon and you will have me onboard. That actually sounds more southern than just plain tomatoes too.
