For sort of Mother's Day, I cooked (real dinner later this week with the whole family) steaks seasoned with Tradewinds Steak and Chop Rub (2 minutes to a side in the skillet, then 4 minutes to a side in the oven, 500 degrees), with mashed potatoes a la sour cream and parmesan, with a side of peas. Missus Shellhammer was delighted.

Sunday: bacon & bleu cheese burger at Red Robin. Taken out for a meal = not cooking = gift.

Monday: homemade roast beef & sharp cheddar sub & Doritos for Lily & I. Campbell's chicken noodle for Hubby. He gave me the stink eye because he is supposed to be on a liquid diet (due to a diverticulitis flare), and would have rather eaten my sandwich.

Tuesday: homemade Salisbury steak, mashed potatoes and gravy, green peas, and broccoli. Hubby told me he would eat that meal once a week if I made it for him.

Wednesday: chicken & rice baked casserole, green beans.

G... and couscous with pine nuts out of a box because it's easier.

We have "Near East" brand couscous with pine nuts all the time - really good tasting. Is that your brand or do you have another - I'm always open to trying a different brand to see how their's is?

And, I cannot say enough good things about the pine nut.

The same, FF. I can't even remember the other brands we've tried after buying "Near East". Been using it for awhile and the pine nuts is our favorite as well.

Surf 'n Turf casserole. A half coffee cup of Barilla elbow macaroni, two cans Bumble Bee albacore tuna, Campbell's mushroom soup-1 can, and some left over hamburgers.
Just fix, slam in microwave, and carry into the man cave, eat at desk and listen to the Chicago Cubs on The Score 67*AM radio.
Not exactly steak and lobster but not bad for a bachelor.:D

Last night Hubby took his girls out on a date. We ended up at a local Mexican restaurant. I had a carne asada burrito as big as the serving plate. Too much food!

Tonight, grilled chicken breast, smashed potato salad, and a green salad.

Trip down to Tuscaloosa, AL today, dinner at DePalmas. Had some goat cheese stuffed ravioli atop a bed of fresh spinach and smothered in spicy bolognese sauce, and some lasagna stuffed with gorgonzola and house made pepperoni. A couple of Peronis to accompany the meal.

Went to a shrimp boil last night. Shrimp, cajun spicy smoked sausage, corn on the cob, and new potatoes all boiled up together in a big pot. Plenty of ice cold beer to wash all that down

So normally we post about these great or fun or interesting or different meals we had. Well, we probably don't all live that way every night (Baby Doll, of course, being an exception as she is super wife / mother) - I certainly don't. So while super girlfriend is visiting her parents in Michigan, I'm home working and manning the fort.

Last night was a total leftover night for a guy who can't cook but can assemble and warm food up. So, on cut-in-half semolina rolls, I put a little butter down, then scooped into each (1) leftover mac 'n cheese, (2) leftover balsamic chicken breast and (3) left over spicy tofu, then sprinkled on some red-pepper flakes and put it all in the oven to warm up. This was the resulting dinner ⇩ (you can make out all the ingredient if you look closely). I washed it down with Diet Sprite (just didn't feel like alcohol last night) and chased it down with some Oreos to close out the meal.

All in all, not bad, did the trick and was actually pretty tasty (although, small mistake, the spicy tofu overpowered a bit). Tonight will either be PB&J or I'll have to shop for something as we are now completely out of real food. Clearly, this posting shows two things, (1) I have no pride and (2) my meals would be terrible without super girlfriend.
