Wednesday, taco salad.

Thursday, roasted chicken, rice pilaf, roasted carrots and parsnips.

Friday, date night with Hubby. Went to Outback - his choice. I had the bleu cheese wedge salad & Alice Springs chicken. Then we went to his company's post-holiday party. They rented out our city's NFL stadium & adjoining exhibition hall. There must have been 40k+ in attendance! The music was NOT my thing, but hanging out with my guy was fun. Had a caricature done. :)

Tonight, had my parents over for dinner. Round steak, gravy, mashed potatoes, broccoli & green beans. And a really long visit. Was fabulous.

Yeah, but it was to bexpected. We were feeling kind of stir crazy with all the rain the past few weeks so went to see the latest Underworld movie. We would've been okay if it was just cheesy, but it was more slapped together bad. Okay if watching at home for free, but not worth paying to see. Oh well, the popcorn was good.

I tweaked one I found online. Shredded cabbage, carrots, red bell peppers, and chopped dill pickles. The dressing was olive oil, vinegar, sugar, and some of the dill pickle vinegar. I threw in a chopped jalapeño and some cilantro. Mix it all up and let it set awhile for the dressing to soak in. It went well with the chorico (the Portuguese version is smoked, more like andouille than Mexican chorizo) and the kids scarfed it down, so I'll likely make it again. I might try bread & butter pickles instead of dill next time, and skip the extra sugar in the dressing.

Good stuff, Dale. Forgot to mention the sautéed andouille with the shrimp. That Portuguese chorico you mentioned sounds good. I'll have to look for some.
Now you're REALLY talkin' good groceries!!!

If there's Publix grocery stores up there, they carry a brand of chorico called Gaspar's. They also make a good linguica, but it's less spicy.
