Yes, you can steam the brim down and it will stay that way. Without reflanging the hat, getting a snap brim out of it probably won’t happen. Straw does have a bit of memory, just not the same as felt. Light steam and gentle hand work may get it back close to the original shape. Patience. Too much steam with heavy hands and you could end up with a pile of wet grass. Wooden spoons with a rounded back can help with a reshape. Set the steamed hat on a soft, dry towel to help create depth and you can work an implement back and forth.

This Monticristi came with a tall cattleman crease and a wired brim. I steamed it open and it has a 7” crown made for a conehead. I removed the brim wire and used a shackle to curl the brim. All of the crown work was done by hand w/o a block.
