Wow such great recipes, thanks guys, i'm writing a shopping list as we speak! For a quick and easy pudding, take some fresh figs, (i use two per person), the figs are always pretty tasteless here in blighty so it makes the most of them. Skin them if desired, cut them in half, lay them cut side up in a baking dish, cover them in vanilla sugar, (if you don't have any, mix a small bowl of caster sugar with a few drops of vanilla essence to taste), cover the figs with the vanilla sugar until they resemble little snowballs. Place in a very hot oven for a few minutes, them whack them under a hot grill, until all that fig juice and sugar starts to caramellize and ooze!! Great served with vanilla icecream, clotted cream or some marscapone.
