Looks good to me. No stretching in the chest when you zip. In my still somewhat limited experience, things will loosen up a bit after this is broken in. I imagine that you'd be unhappy when you hit that point if you went any larger. It would look too loose. For example, I recently bought an Aero Hooch Hauler in Vicenza horsehide and thought it might be too tight at the beginning (my first a level jacket too). Now that it's good and broken in, I tend to feel more comfortable wearing it with a layer underneath than with just a t-shirt. I've also brought in the halfbelt nearly all the way. So personally I might be a bit worried if a jacket fit the way I'd want a broken in one to fit the moment I put it on, as that would probably mean the fit would end up being a bit off once it's broken in.

Very good question... I bought it used and had inquired about the model. I know it’s a Schott made in the USA and was made as a one off for a company called Altmont Apparel.
Gail at Schott told me it is Icelandic cowhide. I’m not even sure what that means...

That jacket looks like a perfect fit to me. If you have never worn this style of jacket before then I am not surprised to hear that it feels tighter than what you are used to. It should loosen up a bit with wear and you will also get used to the fit as you wear it more.

The fit looks great to me. Cafe racer jackets are designed to be close fitting in order to prevent wind ingress and consequent billowing / flapping of the jacket when riding your cafe racer at high speed. Great looking jacket

Welcome to the Lounge. The fit appears to be outstanding to me. Keep in mind that you will likely wear it unzipped most of the time, so any perceived upper body tightness should not be an issue. The shoulder gussets should provide greater mobility than with no gussets.
From the back, the center seam of your jacket looks similar to Aero's Board Racer that "is cut to fit close to the torso, to achieve this we've had to use a centre back seam, quadruple stitched for extra strength, which follows the contours of the wearers backbone." Perhaps the center back seam on your Cafe Racer similarly contours your jacket to fit close to your body.
Anyhow, looking at your pictures I'm not sure how the jacket you just illustrated could fit better.

I bought it off of eBay and don’t know much about it other than it was made by Schott.
