Holiday Greetings FL,

I’m new to this forum and all I say is that it’s a cool place to hang out. I own a Stetson western hat which I would like transformed into a classic style, can someone recommend a hatter in California which provides this services?

Cutting a western brim is no big thing given the amount of stiffener in it. Mark off how much you want to remove, cut to the outside of that mark with sharp scissors then use fine grit sandpaper to smooth the edge to the mark = very simple. As far as changing the crease, soak the crown with distilled water, shape to open crown, let dry, then soak & shape to your desired crease. See the Conversion Corral thread.
Not wanting to take any business away from hatters but re-doing a western can be fun & teach you a thing or 2...JMHO.
