I noticed that there is glue in addition to the sewing thread inside the collar, and cuffs, basically everywhere where leather meets leather...

Is this normal?

I don't know about normal but I think some manufacturers use glue on some seams which eases the sewing process but makes future repairs difficult if not impossible.
It is discussed in dudewuttheheck's blog as below

Yes- glue can be used to assist in hammering down seams. It tends to be reasonably soft-setting and can be prised apart from leather without too much trouble. Leather is skived, glued and hammered by several major manufacturers.
