Typical conversation. I ask what she wants for dinner.

"Can you make Panda Express?"

Yeah. Okay. I'll throw together some "Panda Express". Chinese food. It's not all that hard to throw some stuff into a hot pan. Then stir. Let me clean out the fridge.

Bell pepper and carrot. It's what I had. Any veggie will work. Very lightly tossed, so that it's not overcooked. You want each bite to still have flavor. You need to be able to taste the sweetness.

The eggs should be soft, fluffy, and moist. Nobody wants dry, overcooked eggs.

Rice. Egg Fried Rice is not that complicated. You just have to stir it around. Stir fry. Fried rice. Stir the rice, add the other ingredients, that's it.

I also had tri tip. That went in the oven to roast while I was frying the rice. Panda Express doesn't give you unlimited roast beef on the side, when you order egg fried rice.. That only happens at my house.

Panda Express. Asian stir fry. It could be a combination of any food. Just toss it in a wok.


Ginger, green onions, carrot, and bitter melon. Served with short rib meat.

Chinese food could be anything. Just toss it together in a wok. I'm Chinese. If I make it, it's Chinese food. Butternut squash was on sale. I had it with bitter melon and chicken wings, and pork shoulder.

Tri Tip. In this corner of the world, it's a dietary staple. For whatever reason, it's not very well known anywhere else.

Clearly, there are people who can make Tomato Beef better than I.

Wrapped in plastic, heavily salted, and full of preservatives. My local grocery store's version of ham.

No. Not a clue. I bought a jar of sauce from the supermarket. It can't be that hard to cook pork, then brush on sauce.


"So you're just mocking thousands of years of culinary technique refinement, and defiling an entire culture?"




No. Panda Express already did that. I'm mocking and defiling Panda Express.

Life in The Big City. An uncoordinated collective of people from different backgrounds, living side by side, without rhyme nor reason. In the old days, when we had segregation, you simply lived in whatever neighborhood you belonged in. Today, you live wherever you can afford. And for a lot of us, that's basically how it happens. An apartment or house was available, and it was in the right price range. I don't live next to "those people" by choice. Maybe I'm the one who drove down the property value, and made it affordable for them to move in.


So here we are, people from different parts of the world, commingling and not by choice. Forced to endure the tones of different languages and dialects. We have to see each other in the hallways and on the streets. Sit next to them on the bus. Our kids have to go to the same school. Put up with the weird ways that we look at each other. Having to see and smell the aromas of ethnic food which we have never heard of. And it's all right in your face. You can't get away from it. If you're hungry, they are there. You have to live.



A lot people from different parts of the world roast pork. It's everywhere. In everywhere neighborhood. It must be difficult for cultures for who do not eat pork to look at it every day. Even harder for people who choose not to eat any meat at all.​

I don't know how to roast a whole pig. Nor do I have an oven large enough. I was lucky enough to receive a few pounds of it. What I do know how to do is make fried rice.​
