When the siren of bacon sings her smoky, salty song, you must heed the call.
Especially in the South, where we use it in a large majority of our dishes.
Green beans, grits, white gravy (with bacon grease as the base), creamed corn (or corn in general), and cauliflower (with bacon grease added to the oil for frying in an iron skillet, with bacon, and onions).
Plus it's good on pizza, and in tacos.
