Banana Chocolate Chip Cookies

I made Banana chocolate chip (with dark chocolate) cookies a few days ago and they are now all gone (mostly kids eating them although I had my share.

This is great for over ripe banana's if your looking for an alternative to Banana Bread

Ingredients
2 1/2 cups all purpose flour
1 teaspoons baking powder
1/2 teaspoons salt
1/4 Baking Soda
1/2 cup white sugar
1/2 cup brown sugar
2/3 cup butter softened
2 eggs
1 teaspoon vanilla
2 ripe mashed Banana's
2 cups dark chocolate chips

Preheat oven 400 F. Grease cookie sheets. Mix or sift (although I never bother) the flour, baking soda, baking powder, salt and set aside.

Cream the butter and sugar. Beat in eggs and vanilla. Mix in mashed bananas. Add flour mixture, then stir in chocolate chips. Drop by the spoonful on prepared (either greased or parchment paper) cookie sheets.

Bake in preheated oven 12-15 minutes

vintage, right! so I was practically given a couple of vintage cookbooks at an antique store that was closing, one for hors d'oeuvres from 1941 and the new royal cookbook from 1922... here are a couple recipes from the royal book

chocolate caramels

2 c molasses
1 c brown sugar
1 c cream or milk
1/4 lb unsweetened chocolate
4 tbsp butter

boil all ingredients until they harden in cold water, add 1 tsp vanilla and turn into greased tins. when nearly cold, cut into small squares

Lady Goldenglow (can't wait to try this one, now I need a reason to make it)

1/2 c shortening (knowing me, snob that I am, I'd use butter)
1 1/2 c sugar
grated rind of 1/2 an orange
1 egg & 1 egg yolk (save the white!)
2 1/2 c flour
1/4 tsp salt
4 tsp baking powder (of course they advise using Royal b p)
1 c milk
1 1/2 ounces unsweetened chocolate, melted

cream shortening with sugar and orange rind. add beaten eggs and mix. sift together flour, baking powder, and salt; and add alternately with milk, mix gently. fold in beaten egg white. divide the batter into 2 parts and add chocolate to one part. (here is where it gets to be seriously high-maintenance) put by tablespoonsful alternating light and dark batter into 3 greased layer cake pans. bake in moderate (I would guess 350F) oven for 20 minutes.

filling and icing:

3 tbsp melted butter
3 c confectioner's sugar
2 tbsp orange juice
grated rind of 1/2 an orange
pulp of one orange
1 egg white
3 ounces unsweetened chocolate

mix butter, sugar, orange juice and rind. cut pulp from orange, removing all skin and seeds and add. beat all until smooth. fold in beated egg white. spread icing on layer used for the top of the cake. while icing is still soft, sprinkle top layer with shaved chocolate using half of a square. melt the rest of the chocolate and add to the rest of the icing. spread chocolate icing in between layers and on the sides of the cake

enjoy! because chocolate and orange are divine...

Hey just popped in to say thanks for the recipe Land o Lakes, they were delish and they disappeared really quickly as well, i think the children absorbed them by osmosis! I'm going to try Hep Kitty's chocolate and orange confection next and keep it all to myself:) ! A match made in heaven chocolate and orange, thankyou, all recipes gratefully received. x

They go very fast in my house too!!! I haven't made them since right before I posted that since they are weakness of mine and well I am trying to lay off the sweats. Glad you all enjoyed:)

Last night I made an absolutely fantastic German chocolate cake entirely from scratch, frosting and all.

I'm a huge fan of chocolate and orange together...I love the chocolates shaped like oranges labelled "Whack and unwrap." I have a recipe for a cake that tastes much like those...it's a very light cake.

Terry's chocolate orange!! Oh i love those, we always have those at Christmas it's the law in our house! The tag line used to be 'tap it and unwrap it', oh how times have changed and not for the better, sniff! The recipe sounds great though.:)

Mix 250g ground almonds with 150g caster sugar, then add 120g finely grated dark chocolate. Add 2-3tbs kirsch (or brandy/rum/whatever) and 2-3tbs water and knead to a dough. Sprinkle a board with caster sugar and roll the dough out to 3/4cm thick. Cut into heart shapes using a cookie cutter and place on a baking sheet dusted with more caster sugar and allow to dry overnight.

I think I mentioned this on another thread, but my favorite way of enjoying chocolate is 85% dark, in little nibbles, with little sips of cognac. Bourbon or Scotch is also good.
