Yes. They all curve. That is why some heavy leather duty belts that are used to carry weapons, radios, etc have a steel strip sewn in to keep them in shape.
The more I think about these things, at least in the US (or maybe globally), SoCal coastal weather is ideal. Warm days and cool nights. I am now in South Florida, and I cannot even imagine wearing a jacket. Maybe a couple of times in February... Hot and humid, which does not really bother me...

A good fit is tricky enough to achieve with a stable weight. In a 20-25 lb underweight situation I'd say it is impossible to say anything with any degree of confidence about the future fit. I hope you are alright. Sell the jacket and buy one when you are back at stable weight.
