They would make a bootlegger with zip sleeves on request if you wanted, or at least they did. The example OP is considering looks old enough to be of that era. And if they don't still do it, that's a shame. It's a great option for the Bootlegger to have zippered sleeves.
Probably the top candidate would be Vanson.
And there's the notable extinct Natal/Natel/Walter Dyer/Kerr/etc etc. pattern which is often found made with super heavy hides.
I thought I'd read on these forums that Cal made jackets for Al's Leather, and a few other re-labelerss (Mr. S, etc. ) but I'm not sure how to prove that.
I think Cal has used YKK zippers in some periods, although the more vintage ones use Talon or Crown hardware.

Manufacturers and merchants know their business, they have words that mean things, and they use them correctly.

I'm not sure what the function of the sleeve stitching is but it doesn't seem to be for armor pockets. But armored would be a cool option for the model. The sleeves are very nicely formed to curve for a naturally comfortable riding position.
