Yes, the cupcake craze is sweeping the nation! I made the mistake of going to the world famous Crumbs this afternoon....oh my....

My friend Michael makes the best cupcakes ever, so i'm spoilt really, he supplies all the tea shops and bakers where i live and is the official Cupcake Queen of Rye. My favourite is his carrot cupcake with loads of creamy topping and the double chocolate rum and raisin, but alas the recipes are secret, even i'm not privy so i can't share them, sorry.:mad:

Lemonade Cupcakes

1 (6-ounce) can frozen lemonade concentrate, thawed
1 (18.25-ounce) package white cake mix
1 (8-ounce) carton sour cream
1 (3-ounce) package cream cheese, softened
3 large eggs
1 (12-ounce) can cream cheese frosting
Garnishes: chewy candies, colored sugar, and candy sprinkles

Remove 2 tablespoons lemonade concentrate from can, and reserve for another use. Combine remaining concentrate, cake mix, and next 3 ingredients in a mixing bowl. Beat at low speed with an electric mixer until moistened. Beat at high speed 3 minutes, stopping to scrape down sides. Spoon batter into 30 paper-lined muffin cups, filling each three-fourths full. Bake at 350F for 22 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on a wire rack 5 minutes. Remove cupcakes from pans; cool completely on wire rack. Spread evenly with frosting. Garnish, if desired. Yield: 30 cupcakes.

Cappuccino Cupcakes
• 1 package dark chocolate cake mix
• 1 1/3 strong brewed or instant coffee at room temperature
• 1/3 cup vegetable oil or butter
• 3 large eggs
• 1 container (16 ounces vanilla frosting)
• 2 tbsp coffee liqueur
• Grated chocolate, grate half of a 3 or 4 ounce milk, dark chocolate or espresso chocolate candy bar on the large holes of a standing grater.
• Chocolate covered beans(optional)
• Additional coffee liqueur(optional—yeah, for drinking!)
1. Preheat oven to 350*. Line regular size muffin pans with paper muffin cup liners
2. Beat cake mix, coffee, oil and eggs with mixer at low speed for 30 seconds. Beat at medium speed for 2 minutes.
3. Spoon batter into prepared muffin cups filling2/3 full.
4. Bake 18 to 20 min or until toothpick comes out clean.
5. Cool in pans for 10 minutes.
6. Remove from pans and cool.
7. Combine frosting and 2 tbsp liqueur in small bowl; mix well
8. Before frosting, poke about 10 holes in cupcake with toothpick.
9. Pour 1 to 2 tsps liqueur over top of each cupcake, if desired.
10. Frost and sprinkle with chocolate
11. Garnish with chocolate-covered coffee beans , if desired.

Coca Cola Cupcakes

• 1 cup coca cola or other cola drink
• 1/2 cup butter
• 1/2 cup vegetable oil
• 1/4 cup powdered cocoa
• 22 large marshmallows

• 2 cups all purpose flour
• 2 cups sugar
• 1 teaspoon baking soda
• 1 teaspoon vanilla
• 1 cup buttermilk
• 2 large eggs, beaten

Preheat oven to 325 degrees. Line cupcake pans with paper liners. These cupcakes work best with the silver metallic liners.

Part one
In a small saucepan mix cola, butter, vegetable oil and cocoa. Bring to a boil, remove from heat, and add marshmallows. Place lid on saucepan and leave until marshmallows begin to melt. Stir well.

Part two
Mix flour, sugar, and baking soda in a large mixing bowl. Add buttermilk, eggs, and vanilla. Mix well.

Combine Part One and Part Two in the mixing bowl. Spoon cupcake batter into cupcake pan liners until they are 1/2 to 2/3 full. Bake at 325 degrees for approximately 20 minutes or until toothpick inserted in center comes out clean.

Cool them completely Frost!

• 1/4 cup powdered cocoa
• 6 tablespoons coca cola or other cola
• 1/2 cup butter
• 3 and 3/4 cup powdered sugar (one 1 lb box)
• 1 cup chopped pecans
• 1 teaspoon vanilla

In a medium saucepan, mix together cocoa, cola, and butter. Heat over medium heat until melted then bring to a boil. Remove from heat and add powdered sugar, pecans and vanilla. Stir until blended well. Let frosting cool until stiff enough to frost cupcakes.

Coconut Cupcakes with Coconut Cream Cheese Frosting
• 3/4 cup of unsalted butter, room temperature
• 1 1/4 cup of sugar
• 3 eggs, room temperature
• 1 cup of canned coconut milk
• 1 teaspoon of vanilla extract
• 2 1/4 cups of flour
• 1 teaspoon of salt
• 1 teaspoon of baking powder
• 1/2 cup of sweetened desiccated coconut
Coconut Cream Cheese Frosting Ingredients
• 1/2 cup of butter (1 stick), room temperature
• 8 oz of Philly cream cheese (1 package), room temperature
• 1/2-1 cup of powdered sugar
• 1/4 cup of sweetened desiccated coconut
Cupcake Method
1 Preheat the oven to 350 F. Cream the butter until light and fluffy. Add sugar and cream till light and fluffy again, scraping down the sides halfway through to ensure even mixing.
2 Add the eggs, one at a time, beating for 30 seconds each to ensure mixing. Be sure to scrape down the sides after each egg to ensure even mixing.
3 Combine the flour, salt, and baking powder in one bowl. In another add 1 cup of a well shaken can of coconut milk and a teaspoon of vanilla. Add 1/3 of the dry ingredients and mix, then add 1/2 of the wet ingredients. Continue alternating with the wet and dry mixtures, ending with the dry. Stop mixing once just as the ingredients become incorporated; do not overbeat.
4 Fold in the coconut. Scoop into cupcake papers about one half to three-quarters of the way full. Bake for 18-22 minutes, rotating the pan after the first 15 to ensure even baking. Be sure to check with a toothpick to see if the cupcakes are done. If the toothpick comes out of the cupcake clean, then they're ready. Allow the cupcakes to cool for a minute or two in the pan, then transfer to a wire rack to cool completely.
Frosting Method
1 Cream the butter and cream cheese together, about 3 minutes. Scraped down the sides and bottom.
2 Slowly add the powdered sugar, taste as you go adding more sugar until you have reached the desired sweetness.
3 Fold in the coconut. Spread onto cooled cupcakes. Sprinkle on a bit of extra shredded coconut on top and serve.
Makes 20 cupcakes.

Good idea!! Wow, there's no need to go to the State Fair to get deep fried Coke now; cupcakes for the win!
 
Aside from the fact that they'd be way too sour and acidic to bake, I'd be seriously tempted to try a Collins Mix version too... if I baked that is. (Ovens and I don't play well together, got a bad burn once--and you know the saying about "once burned...")

Or when in Indiana, maybe a Faygo Rock'n'Rye version. (Pretty much an "Insert Local Preference Here" kinda thing...:D )

Has anybody been watching "Cupcake Wars" on the Food Network?

That show's a little ridiculous and a little cheesy, but the fact that the finalists have to shove out 1000 gourmet cupcakes in four hours is just insane.

haha I saw that last night! it blew my little mind though, 1000 cupcakes in 4 hours... last night was cute though, it was kid-inspired cupcakes and stand. the lady who won had her daughter's artwork plastered all over her stand. really cute

DB it may work if you add a little extra sugar. never thought about it

check out the websites too, they have some cool recipes. I think there are recipes for root bee cupcakes, rum & coke cupcakes, jello shot cupcakes, f-u cupcakes (!), the list goes on. the wild west cupcakes should be fun too :D

Guinness... about the only beer I'll drink. Cooking with it... sounds like "possibilities"!

Just for you, HK, I'm downloading an MP3 of ELO's Evil Woman--I seldom listen to anything other than classical, but with all this food-taunting that song just became your personal theme in my eyes.;)

Australia has been gripped with cupcake fever for the last few years (we arrived at the end of 2008 and it was well and truly in full swing) to the extent where there are many specialised cupcake shops all over the show.

I'll admit though I haven't had a cupcake since I was a child, but I love a slice of cake with afternoon tea, preferably fruit, pound, Madeira or orange.

Diamondback, Guinness or any stout is great in beef stews, steak and kidney pudding or pie, and welsh rarebit.

Yes, cupcakes are for the kiddies, I'd rather a nice slice of Madeira cake on a plate of fine bone china with a nice cup of tea.

I don't like cupcake-mania. Some cupcakes are delicious - those made by my friend Gemma at http://www.crumbsanddoilies.co.uk/ for example. But having skinny little fashion people who would clearly never eat a nice piece of Victoria Sponge raving about them is abhorrent to me.
