Ok, so I got this jacket and it's great. So I was confused today when I got out the measuring tape. I ordered a 48. However the p2p is less than 24", the sleeves are almost 25" on the dot and the shoulder straight across is 19.5". How does this fit so well, what am I missing? The back is a little longer with a length of 27".

pit to pit is measured with jacket zipped up, laid flat and measured from outer edge to outer edge just belwo the arm pit , not seam to seam as i suspect you are doing. the outer edge will be the side panel folded. Your pit2pit on that jacket will be 25" or a touch over. Pit to pit doubled is always more than the label size, on close fitting jackets can be as little as 2" extra right up to 8" on more generously cut styles.

You sleeve length is actually 27.75" , this is taken from the highest point of the head or sleeve ( where it joins shoulder ) and straight down the centre of the sleeve ( imagine you are wearing the jacket and the line is a plumb line ) to the end of cuff , i suspect you are measuring incorrectly again.
