A Few Haircut Questions

I have hair texture very similar to my grandfather (the man in the pictures below). Only difference is I have a more typical hairline whereas he had a flat hairline. But two questions:

1) What would his haircut be called--and why is it almost shaved off in the back?
2) How would I maintain the haircut? It seems layered and thick, and has a sort of vertical effect from the sides and top.
3) How long would I have to have it grow--how many inches does it appear on the top and sides and back--and how often would I have it cut?

It is similar to my current cut. I ask for a 1 ½ guide on the sides and back with a tapered cut and leave the length on the top. You could go with the number 1 guide, but it is awfully short. I also tend to keep the fade on the side low. I am in the military and I like something to comb on top. I usually get my haircut once every two weeks, just to keep the hair off the ears. I get the top trimmed up probably every other haircut. Of course I use Brylcreem on the top to keep it manageable.
