As recommended by BellfastBoy, I upped the pouncing paper to 1000 grit. Ive been using a semi flexible sanding backer ( 3x9") and sanding by hand instead of using the vibratory sander. Have a couple passes now and its really starting to smooth the surface out and look a lot more evened up ...
