I would definitely say the burgundy. Definitely works better with jeans and tan/ blue slacks. Otherwise a smart pair of black shoes can cheapen the whole outfit. The only prehaps iffy one is the grey trousers, generally the rule is brown shoes but it all depends on the shade and texture.
Sorry to barge in but I guess it depends on what colour you want these. If its the brown your after, you can get certain products to help remove the wax/ polish layers to restore the former glory but restoration to the previous colour will still be difficult. I would suggest use of a black cream...
