I believe the style you're after is the "spearpoint" collar shirt. They were very common in the early 20th century.
I'm not aware of SPECIFIC makers, but I do know that there are shirts out there which still come with these collars. I guess it's just a process of hunting around.

I see no reason why you CAN'T wear a frock-coat in the 21st century. It doesn't look that different from a standard trenchcoat/overcoat, and they're still very common.
Like others here, I found the lack of neckwear a little weird. At least a cravat or something. But simply a buttoned up shirt with nothing there...looks...Not 'wrong', per se, just really...strange.
