It's not going to get rid of all contrast, but it would even it out. A leather cream might even things out more. I personally wouldn't do it, because I think it looks great as is.
No idea. I'm not the original owner. This leather darkens whenever it is in contact with water though, so if you wanted to even it out you could give it a dip.
New, non vintage jackets should not be babied. They look better broken in. If you are worried about it losing value you might as well just sell it. Otherwise what is the point of owning it? Just to admire it?
